Spring Salads

The rain is falling softly outside and I’m so thankful for it! I can’t wait to go on a wild mushroom hunt and see what treasures I find. We have morel and puffballs here, but I’m hesitant to try the other varieties. That is a matter of life or death I hear! :D

Anna’s green house it now providing us with spring lettuces, radishes, baby bok choy and arugula. Mmmm! I absolutely love eating foods that I know aren’t penitrated with chemical sprays and harmful fertilizers!

Now that cold weather is on it’s way out and fresh fruits and vegetables are in, it’s the perfect time to post some salad recipes. Sometimes recipes for salad seem rather rediculous, but when one eats a salad or more a day it’s refreshing to have new ideas.

Here’s one I made this afternoon. It’s so new I don’t have a name for it! :P It’s a perfect meal though combined with a slice of whole grain bread or an orange.

Spring lettuce mix
spinach
1/2 c. cottage cheese
1/2 avocado
1/4 c. walnut pieces
3 radishes, thinly sliced
Newman’s Tuscan Italian dressing (or homemade)

Serve on individual plates – it’s beautiful! Serves one.

One of our favorite salads for spring and summer, this one goes well with chicken, or even meatloaf. Super simple and fast.

Strawberry Salad with Honey Lime Dressing

mixed lettuce and spinach
sliced strawberries
toasted almond slices

Dressing –
lime juice
honey
olive oil
poppyseeds (optional)

Helpful kitchen tip of the month – If you have hard water and use a dishwasher to wash dishes, you’ve probably noticed that glasses come out cloudy and dirty looking. We discovered that adding 1/2 white vinegar (cheapest stuff will do) to each load takes care of it! If someone forgets one time the dish dryer will notice. It’s awesome!
