Okay, so I thought 97 degrees sounded hot. It’s been going over 103 degrees here in the southern tropics – actually more like desert as the humidity has been as low as 20%, which is phenomenally low for Oklahoma.
Anyways, when we hit this point in summer, we’re all thinking ice cream, fruit, slushies…anything cold’ll do! :D Unfortunately, it’s all loaded with sugars…
Speaking of sugars, though! :P Here’s a recipe I made last night for Orange Date Bars. If you’re not a fan of dates you should still try it as it’s not very datey tasting.
1 c. walnuts
10 oz pitted dates
zest from one orange
1 teaspoon vanilla
Process walnuts, dates and orange zest until mixture can be rolled into balls. If you want you can add a tablespoon or two of organic butter to make it stick better. Shape into 1 1/2 inch logs and place on paper lined cookie sheet in the freezer.
Melt chocolate, add vanilla. Roll logs in chocolate and return to paper. Freeze until chocolate is hardened.
