I love sushi.
I’ve tried many different rolls, but I always come back to my favorite, admittedly Americanized, New York Sushi Roll – smoked salmon, avocado, and cream cheese. Only I wish they’d squeeze some cucumber and carrots in there, too. Take notes, sushi man!
This is one of those dishes I accidentally stumbled upon. It’s really the lazy version of sushi or even a spring roll. Just throw it all on a plate and call it a salad, why don’t ya?
So many beautiful colors and fabulous flavors.
The key components are…
Smoked Salmon
Avocado
And cream cheese…rolled in sesame seeds.
Why am I hungry again? I just ate lunch!
Arrange on a bed of spring greens, sprinkle with julienned cucumbers, medallion-ed carrots, and chopped chives and serve with a bowl of Jade Pearl Rice. (My favorite rice at the moment. “Produces the aroma of a bamboo forest, a light vanilla taste, and an explosion of health-giving nutrients” including chlorophyll, the company informs. )
Optionally, leave the greens for another day and toss everything in with the rice.
Spritz with soy sauce or Bragg’s Liquid Aminos and drizzle on some toasted sesame oil.
Or make a mayonnaise ( I know, way to Americanize it more, right? :D ) and wasabi paste dressing.

Just go with what sounds good at the moment. The dressing possibilities are endless…well, I should say, only limited to your pantry.
That’s why I didn’t top mine off with some dried seaweed – just didn’t have it when I needed it.
I will next time – along with tiny slivers of pickled ginger. The thought makes me smile.
